What ingredients for ice cream at home?
Making ice cream at home is really simple.

To give less sweetness and have a creamier ice cream, the use of
Dextrose and fibers such as the
Inulin. (Or use a

Pumpkin ice cream with honey, rosemary and walnuts.
Autumn is also the time of Chestnuts and Marrons with which to make delicious Chestnut or Marron Glacé ice cream, Hazelnuts, Almonds, Walnuts.
The combinations are endless, just think of combining a fruit or vegetable with a spice to create a sensational new ice cream flavor.
Our recipes for 1kg of ice cream to make at home
Tatin Cake
For this dessert, reintepreted as an ice cream version we will need the following ingredients:
300gr: Baked/Caramelized Apples
100gr: Egg Yolk
100gr: Fresh Cream
10gr: Melted Browned Butter
5gr:
Neutro 5cf
35gr:
Skim Milk Powder
300gr: Fresh Whole Milk
150gr: Sugar
I recommend a pinch of cinnamon and cloves in the apples.
-Cook the apples with the sugar and spices.
-Add all ingredients.
-Mix / Blend thoroughly
-Bring mixture to 85°C
-Refrigerate
-Freeze
Pumpkin and Macaroons
The following ingredients are needed for this ice cream, which requires baking pumpkin:
250gr: Baked Pumpkin
50gr: Egg Yolk
150gr: Fresh Cream
5gr:
Neutro 5cf
35gr:
Skim Milk Powder
330gr: Fresh Whole Milk
150gr: Sugar
30gr:
Dextrose
Crumble the macaroons and add them at the end of mantecation
I recommend a pinch of cinnamon and salt in the mixture.
-Bake the baked pumpkin.
-Add all ingredients.
-Mix / Blend thoroughly
-Bring mixture to 85°C
-Refrigerate
-Freeze
Rum and Marron Glacès Fondant
A dairy-free, chocolatey ice cream with an alcoholic note.
250gr: 70% Chocolate
5gr: Dark Rum
100gr: Sugar
5gr:
Neutro 5cf
25gr:
Dextrose
10gr:
Inulin
(If desired, 35gr of
Fruit Base 50 instead of Dextrose, Neutro and Inulin)
610gr: Boiling Water
At the end of mantecation add Marron Glacès in pieces
-Bring water to 85°C
-Add all ingredients
-Mix / Blend thoroughly
-Refrigerate
-Freeze
